Acacia honey is one of the most prized varieties of honey in Serbia, gathered from the nectar of white acacia (Robinia pseudoacacia) blossoms. Pcelarstvo Djordjevic is a family farm with more than 200 hives that move seasonally into the acacia forests and meadows of Sumadija during May, when the acacia is in full bloom.
The honey is light yellow to almost colourless, with a discreet floral aroma and a mild, almost neutral sweetness without bitterness. Due to its high fructose content (over 40 percent), acacia honey crystallises very slowly and can remain liquid for up to two years in a properly sealed jar — which is one of the markers of genuine, unadulterated acacia honey.
It pairs perfectly with tea, milk, yoghurt and baked goods without overpowering their flavour. Recommended for diabetics thanks to its low glycaemic index, and for children for its gentle taste. Store at room temperature, away from direct sunlight.
